Mount Eliza Cheese
Mount Eliza Cheese have achieved the highest possible industry standards with the MPI in being allowed to use unpasteurised milk. Their first raw milk Red Leicester arrived at market in May 2015 and has now been joined by the Farmhouse Cheddar.
The raw milk cheeses have been instant hits. Chris and Jill knew that the flavour profiles would change with the raw milk but they have been overwhelmed with the response. The volatile flavours and natural enzymes are not killed off by heat treating. The flavours have a depth and complexity that can only be explained by the unpasteurised, half-jersey milk. One of New Zealand’s expert cheesemongers tweeted that “tasting Mount Eliza’s raw milk Red Leicester is like watching colour television for the first time when all you’ve had is black and white”.
