Kumara, fat ones or long skinny ones, are what Allan and Leanne from Te Teko Vegetables currently have available. When a kumara is the same size as a pumpkin it becomes a little unbelievable. Just imagine taking a lengthwise slice off the top to create a lid, take out some of the centre, leaving fat sides and then stuffing the kumara with a mix of herbs and green vegetables, put the lid on,oil the outside then ready to bake. The vegetables would become steamed in the inside. It would look impressive on the table, creating a conversation piece. I think I might have to try that this weekend!
