This is what happened for me last Saturday as I approached the mushroom stall. Billy from Marama’s Mushrooms had one of his incredible displays of a New Zealand Native mushroom. Called the ‘Peke Peke Kiore’ or Coral Tooth Mushroom. Like a small child and trained well by my parents, I reached forward in excitement as I just had to touch this soft gentle looking creation of Mother Nature. But like I said, I asked first – “can I touch this”? So exciting, it just beckoned to me to touch it. Gently I stroked this mushroom with the back of my hand. It was amazing and I have to say I was not the only one who wanted to do this. Billy is remarkably busy trialing these different mushrooms. Delicate in many ways, but for cooking stir fry is the way to go.
