
Liberty Growers are currently harvesting Tomatillos. To me they look like a green tomato wrapped up in leaves, but these unusual vegetables are also known as the Mexican husk tomato.
Tomatillos originated in Mexico and were cultivated in the pre-Columbian era. Low in calories but relatively high in fiber, tomatillos are a great way to add volume (especially in smoothies) while still keeping meals healthy. With a nice dose of vitamin C and potassium, these vegetables are a good choice for boosting your immune system.
Additionally, tomatillos include niacin, a naturally occurring B vitamin that helps cells turn food into energy.
