Radicchio is currently being harvested at Riverside Growers. More commonly known as Italian chicory because of its common use in Italian cuisine. It is grown as a leaf vegetable and usually has colorful white-veined red leaves that form a head. Radicchio is crisp like cabbage, but a loosely formed heart. It has a bitter and spicy taste which mellows if it is grilled or roasted. Ideal in salads or a slaw mix to add color variations as well as flavor. Being so fresh it will last in the fridge if you are merely using the odd leaves.
